Main Ingredients
- 2 cups cooked chicken, shredded
- 1 can black beans, drained and rinsed 15 ounces
- 1 can corn, drained 15 ounces
- 1 can diced tomatoes with green chilies 10 ounces
- 1 cup cooked rice (white or brown)
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 cup shredded cheddar cheese
- 1 cup salsa
- 8 pieces flour tortillas (8-inch)
- 1/4 cup chopped fresh cilantro (optional)
- to taste sour cream (for serving, optional)
Preheat your oven to 350°F (175°C). Gather and prep all ingredients.
Spread a thin layer of salsa on the bottom of a 9x13-inch baking dish. Lay down 4 tortillas, overlapping slightly. Spoon half of the chicken mixture over the tortillas, sprinkle half of the cheese on top. Repeat with another layer of tortillas, remaining chicken mixture, and salsa. Top with remaining cheese.
Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until cheese is bubbly and golden.
Let the casserole cool for about 5 minutes before serving. Garnish with cilantro and serve with sour cream if desired.
