Mixed dried fruit

  • 2 cups mixed dried fruit (such as raisins, currants, and chopped dried apricots)
  • 1 cup unsweetened applesauce
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 cup chopped nuts (such as walnuts or pecans)
  • 1/2 cup candied ginger, chopped
  • 1/2 cup orange zest (from about 2 oranges)
  • 1/2 cup chopped crystallized fruit (such as cherries or pineapple)

Instructions
 

  • Prepare the fruit mixture by combining mixed dried fruit with unsweetened applesauce in a large mixing bowl.
  • Mix the batter by creaming together softened unsalted butter and packed brown sugar until light and fluffy, then add eggs and vanilla extract.
  • Combine dry ingredients in a separate bowl and gradually add to the butter mixture, then fold in the fruit mixture and other ingredients.
  • Pour the batter into a prepared baking pan and bake in a preheated oven at 350°F for 30-35 minutes.
  • Allow the traybake to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
