- 2 cups mixed dried fruit (such as raisins, currants, and chopped dried apricots)
- 1 cup unsweetened applesauce
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/4 teaspoon salt
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 cup chopped nuts (such as walnuts or pecans)
- 1/2 cup candied ginger, chopped
- 1/2 cup orange zest (from about 2 oranges)
- 1/2 cup chopped crystallized fruit (such as cherries or pineapple)
Prepare the fruit mixture by combining mixed dried fruit with unsweetened applesauce in a large mixing bowl.
Mix the batter by creaming together softened unsalted butter and packed brown sugar until light and fluffy, then add eggs and vanilla extract.
