  • 1 cup cream cheese softened for easy spreading
  • 1 tablespoon fresh dill or 1 teaspoon dried dill
  • 1 tablespoon lemon juice adds brightness
  • 1/2 teaspoon garlic powder for subtle kick
  • to taste salt and pepper for seasoning
  • 1 large cucumber thinly sliced
  • 8 slices whole grain bread for sandwich base
  • 1 tablespoon butter softened, optional

Instructions

  • Gather all ingredients and ensure cream cheese is softened.
  • In a medium bowl, combine cream cheese, dill, lemon juice, garlic powder, salt, and pepper. Mix until smooth.
  • Slice the cucumber thinly, about 1/8 inch thick, and lay on a paper towel to absorb moisture.
  • Spread butter on one side of each slice of bread. On four slices, spread the cream cheese mixture, then layer cucumber slices on top. Top with remaining bread slices, buttered side up.
  • Cut sandwiches into quarters or halves and serve immediately or refrigerate for up to 60 minutes.

Notes

For best results, use fresh ingredients and avoid sogginess by salting cucumber slices before assembly.
