Chicken
- 2 pounds boneless, skinless chicken breasts
- 1 ounce taco seasoning 1 packet
- 1 cup salsa
- 15 ounces black beans 1 can, rinsed and drained
- 15 ounces corn 1 can
- 1 cup diced bell peppers
- 1 cup diced onion
- 1 tablespoon olive oil
- salt and pepper to taste
- taco shells or tortillas for serving
- toppings shredded cheese, sour cream, avocado, cilantro, lime wedges
Gather all your ingredients.
Prepare the chicken by placing it in a large bowl and trimming any excess fat.
Add taco seasoning, salsa, black beans, corn, bell peppers, onion, olive oil, salt, and pepper to the chicken. Mix well.
