Chicken

  • 2 pounds boneless, skinless chicken breasts
  • 1 ounce taco seasoning 1 packet
  • 1 cup salsa
  • 15 ounces black beans 1 can, rinsed and drained
  • 15 ounces corn 1 can
  • 1 cup diced bell peppers
  • 1 cup diced onion
  • 1 tablespoon olive oil
  • salt and pepper to taste
  • taco shells or tortillas for serving
  • toppings shredded cheese, sour cream, avocado, cilantro, lime wedges

Instructions
 

  • Gather all your ingredients.
  • Prepare the chicken by placing it in a large bowl and trimming any excess fat.
  • Add taco seasoning, salsa, black beans, corn, bell peppers, onion, olive oil, salt, and pepper to the chicken. Mix well.
  • Transfer the mixture to the crockpot and spread it out evenly. Cover and set to cook on low for 6-8 hours or high for 3-4 hours.
  • After cooking, shred the chicken in the crockpot using two forks and stir to combine.
  • Assemble your tacos with the chicken mixture and your favorite toppings.
