Chicken

  • 2 pounds boneless, skinless chicken breasts
  • 1 ounce taco seasoning 1 packet
  • 1 cup salsa
  • 15 ounces black beans, drained and rinsed 1 can
  • 15 ounces corn, drained 1 can
  • 1 cup chicken broth
  • 8 small flour or corn tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro optional
  • lime wedges for serving

Instructions
 

  • Gather all your ingredients.
  • Place the chicken at the bottom of the crockpot.
  • Sprinkle taco seasoning over the chicken, then add salsa, black beans, corn, and chicken broth. Stir gently to combine.
  • Cover the crockpot and set it to cook on low for 6-8 hours or on high for 3-4 hours.
  • After cooking, shred the chicken in the crockpot and stir to combine.
  • Warm tortillas and assemble tacos with the chicken mixture and desired toppings.
