Chicken
- 2 pounds boneless, skinless chicken breasts
- 1 ounce taco seasoning 1 packet
- 1 cup salsa
- 15 ounces black beans, drained and rinsed 1 can
- 15 ounces corn, drained 1 can
- 1 cup chicken broth
- 8 small flour or corn tortillas
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1 cup shredded cheese cheddar or Mexican blend
- 1/2 cup sour cream
- 1/4 cup chopped fresh cilantro optional
- lime wedges for serving
Gather all your ingredients.
Place the chicken at the bottom of the crockpot.
Sprinkle taco seasoning over the chicken, then add salsa, black beans, corn, and chicken broth. Stir gently to combine.
Cover the crockpot and set it to cook on low for 6-8 hours or on high for 3-4 hours.
