Instructions
 

  • Wash the red potatoes thoroughly under cold water. Cut the potatoes into 1-inch cubes. Soak in cold water for 30 minutes for extra crispiness if desired.
  • In a large mixing bowl, combine the cubed potatoes with olive oil, garlic powder, onion powder, dried rosemary, paprika, salt, and pepper. Toss until evenly coated.
  • Preheat your oven to 425°F. Line a baking sheet with parchment paper. Spread the seasoned potatoes in a single layer on the baking sheet. Roast for 25-30 minutes, flipping halfway through.
  • Check for doneness by piercing a potato with a fork. If desired, leave in the oven for an additional 5 minutes for extra crispiness. Garnish with fresh chopped parsley before serving.
