Sweet Potatoes

  • 2 large sweet potatoes about 1.5 pounds
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon cayenne pepper optional for heat

Instructions
 

  • Peel the sweet potatoes and cut them into thin fries, about 1/4 inch thick. Soak in cold water for 30 minutes if desired.
  • Drain and pat the fries dry. Toss with olive oil and seasonings in a large bowl until well-coated.
  • Preheat the oven to 425°F. Line a baking sheet with parchment paper and spread the fries in a single layer.
  • Bake for 25-30 minutes, flipping halfway through, until golden brown and crispy.
  • Let the fries cool for a few minutes before serving.
