Chicken Drumsticks
- 2 pounds chicken drumsticks
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 0.5 teaspoon cayenne pepper (optional) for heat
Rinse the chicken drumsticks under cold water and pat them dry with paper towels.
Trim any excess skin or fat from the drumsticks and place them in a large bowl.
Pour olive oil and add garlic powder, onion powder, smoked paprika, dried oregano, salt, black pepper, and cayenne pepper to the bowl. Mix until well coated.
Let the drumsticks marinate for 15-30 minutes at room temperature or longer in the fridge.
Preheat the oven to 425°F (220°C) and set up a wire rack on a baking sheet.
Shake off excess marinade from the drumsticks and arrange them in a single layer on the wire rack.
Bake for 35-40 minutes or until the internal temperature reaches 165°F (74°C). Broil for an additional 2-3 minutes for extra crispiness.
Let the drumsticks rest for 5 minutes before serving.
