- 2 pounds boneless, skinless chicken thighs cut into bite-sized pieces
- 1 cup all-purpose flour
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 large eggs beaten
- 1 cup panko breadcrumbs
- 1 cup orange juice
- 1/2 cup granulated sugar
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon cornstarch
- 1 teaspoon minced garlic
- 1 teaspoon minced ginger
- 1 tablespoon vegetable oil
- Green onions sliced (for garnish)
- Sesame seeds for garnish
Prepare the chicken by cutting the boneless, skinless chicken thighs into bite-sized pieces. In a large bowl, combine 1 cup of all-purpose flour, 1 teaspoon of salt, and 1 teaspoon of black pepper. Mix well.
Make the orange sauce by combining 1 cup of orange juice, 1/2 cup of granulated sugar, 1/4 cup of soy sauce, 2 tablespoons of rice vinegar, 1 tablespoon of cornstarch, 1 teaspoon of minced garlic, and 1 teaspoon of minced ginger in a saucepan. Bring to a simmer over medium heat and stir until thickened, about 5-7.
Coat the chicken by dipping pieces into the flour mixture, then into 2 beaten eggs, and finally rolling in 1 cup of panko breadcrumbs.
Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Fry the coated chicken pieces in batches for about 4-5 on each side until golden brown and crispy. Transfer to a paper towel-lined plate to drain excess oil.
Combine the fried chicken with the orange sauce in the saucepan, tossing gently to coat evenly. Serve hot, garnished with sliced green onions and sesame seeds.
