Chicken

  • 2 pounds boneless, skinless chicken thighs cut into bite-sized pieces
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 large eggs beaten
  • 1 cup panko breadcrumbs
  • 1 cup orange juice
  • 1/2 cup granulated sugar
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon cornstarch
  • 1 teaspoon minced garlic
  • 1 teaspoon minced ginger
  • 1 tablespoon vegetable oil
  • Green onions sliced (for garnish)
  • Sesame seeds for garnish

Instructions
 

  • Prepare the chicken by cutting the boneless, skinless chicken thighs into bite-sized pieces. In a large bowl, combine 1 cup of all-purpose flour, 1 teaspoon of salt, and 1 teaspoon of black pepper. Mix well.
  • Make the orange sauce by combining 1 cup of orange juice, 1/2 cup of granulated sugar, 1/4 cup of soy sauce, 2 tablespoons of rice vinegar, 1 tablespoon of cornstarch, 1 teaspoon of minced garlic, and 1 teaspoon of minced ginger in a saucepan. Bring to a simmer over medium heat and stir until thickened, about 5-7.
  • Coat the chicken by dipping pieces into the flour mixture, then into 2 beaten eggs, and finally rolling in 1 cup of panko breadcrumbs.
  • Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Fry the coated chicken pieces in batches for about 4-5 on each side until golden brown and crispy. Transfer to a paper towel-lined plate to drain excess oil.
  • Combine the fried chicken with the orange sauce in the saucepan, tossing gently to coat evenly. Serve hot, garnished with sliced green onions and sesame seeds.
