Chicken

  • 2 pounds boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1 cup orange juice
  • 1/2 cup sugar
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon cornstarch
  • 1 tablespoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1 tablespoon sesame oil
  • 1 teaspoon red pepper flakes (optional)
  • Green onions, sliced (for garnish)
  • Sesame seeds (for garnish)

Instructions
 

  • Wash chicken thighs under cold water, pat dry, cut into bite-sized pieces, and season with salt and black pepper.
  • Prepare the orange sauce by combining orange juice, sugar, soy sauce, rice vinegar, cornstarch, grated ginger, minced garlic, and sesame oil in a saucepan. Stir and heat until thickened, about 5-7.
  • Coat chicken pieces by dredging in flour, dipping in beaten eggs, and coating with panko breadcrumbs.
  • Heat oil in a skillet or deep fryer. Fry chicken pieces in batches for about 5-7 until golden brown and cooked through.
  • Toss fried chicken pieces with the orange sauce in a mixing bowl and serve hot, garnished with green onions and sesame seeds.
