Chicken Filling

  • 1 cup cooked, shredded chicken
  • 1/2 cup ranch dressing
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 4 large low-carb tortillas
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Fresh cilantro, chopped (optional, for garnish)

Instructions
 

  • Prepare the chicken by shredding it and mixing it with ranch dressing, garlic powder, onion powder, paprika, salt, and pepper.
  • Assemble the quesadilla by heating olive oil in a skillet, placing a tortilla in the skillet, spreading half of the chicken mixture, and adding cheese before topping with another tortilla.
  • Cook the quesadilla for 3-4 minutes on each side until golden brown and crispy.
  • Slice the quesadilla into wedges and garnish with fresh cilantro if desired. Serve warm.
