Fresh Corn Kernels
- 1 cup fresh corn kernels (about 2 ears of corn)
- 1 cup ricotta cheese
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 2 large eggs
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 cup chopped fresh parsley (optional)
- as needed cup vegetable oil for frying
Prepare the corn by shucking the ears and cutting the kernels off the cob.
In a large mixing bowl, combine corn kernels with ricotta cheese, flour, Parmesan cheese, eggs, baking powder, salt, black pepper, garlic powder, and onion powder. Mix until well combined.
Shape the fritters by scooping out the mixture and flattening it in a hot skillet.
Fry the fritters in hot vegetable oil for about 3-4 minutes on each side until golden brown and crispy.
Transfer cooked fritters to a paper towel-lined plate to drain excess oil.
