Fresh Corn Kernels

  • 1 cup fresh corn kernels (about 2 ears of corn)
  • 1 cup ricotta cheese
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 cup chopped fresh parsley (optional)
  • as needed cup vegetable oil for frying

Instructions
 

  • Prepare the corn by shucking the ears and cutting the kernels off the cob.
  • In a large mixing bowl, combine corn kernels with ricotta cheese, flour, Parmesan cheese, eggs, baking powder, salt, black pepper, garlic powder, and onion powder. Mix until well combined.
  • Shape the fritters by scooping out the mixture and flattening it in a hot skillet.
  • Fry the fritters in hot vegetable oil for about 3-4 minutes on each side until golden brown and crispy.
  • Transfer cooked fritters to a paper towel-lined plate to drain excess oil.
