Crispy Gnocchi with Spinach and Feta
- 2 cups potato gnocchi Choose fresh or store-bought gnocchi for the best results.
- 2 tablespoons olive oil Helps achieve crispy texture.
- 3 cups fresh spinach Roughly chopped.
- 1 cup feta cheese Crumbled.
- 2 cloves garlic Minced.
- 1 teaspoon red pepper flakes Optional.

Prepare the gnocchi. If using frozen gnocchi, thaw for about 15 minutes. Heat a skillet over medium-high heat, add olive oil, and add gnocchi in a single layer.
Cook the gnocchi for about 3-4 minutes until golden brown, then flip them over. Add minced garlic and sauté for 30 seconds. Toss in chopped spinach and cook until wilted, about 2-3 minutes.
Remove from heat, sprinkle crumbled feta over the mixture, squeeze lemon juice, and season with salt and pepper. Toss gently until combined.
To achieve a perfect crisp, avoid overcrowding the skillet. Cook in batches if necessary. Optionally, place under the broiler for a minute or two for extra crunch.
