Chicken Tenders
- 1 pound chicken tenders Fresh or thawed
- 1 cup all-purpose flour
- 2 large eggs beaten
- 1 cup breadcrumbs preferably panko
- 1/2 cup grated Parmesan cheese
- 3 cloves garlic minced
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried Italian herbs
- 1/4 cup olive oil
- fresh parsley chopped, for garnish
Rinse the chicken tenders under cold water and pat them dry with paper towels.
In a shallow dish, combine the all-purpose flour, paprika, salt, black pepper, and dried Italian herbs.
In another shallow dish, beat the eggs until well combined.
In a third shallow dish, mix the breadcrumbs with the grated Parmesan cheese and minced garlic.
Dredge each chicken tender in the flour mixture, then dip in the beaten eggs, and finally roll in the breadcrumb mixture.
Place the coated tenders on a prepared baking sheet and drizzle with olive oil.
Bake in a preheated oven at 425°F for 20-25 minutes until golden brown.
