Chicken Tenders

  • 1 pound chicken tenders Fresh or thawed
  • 1 cup all-purpose flour
  • 2 large eggs beaten
  • 1 cup breadcrumbs preferably panko
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic minced
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried Italian herbs
  • 1/4 cup olive oil
  • fresh parsley chopped, for garnish

Instructions
 

  • Rinse the chicken tenders under cold water and pat them dry with paper towels.
  • In a shallow dish, combine the all-purpose flour, paprika, salt, black pepper, and dried Italian herbs.
  • In another shallow dish, beat the eggs until well combined.
  • In a third shallow dish, mix the breadcrumbs with the grated Parmesan cheese and minced garlic.
  • Dredge each chicken tender in the flour mixture, then dip in the beaten eggs, and finally roll in the breadcrumb mixture.
  • Place the coated tenders on a prepared baking sheet and drizzle with olive oil.
  • Bake in a preheated oven at 425°F for 20-25 minutes until golden brown.
