Ingredients
  

Wild Rice

  • 2 cups wild rice Rinsed and drained
  • 4 cups vegetable broth
  • 1 tablespoon olive oil For sautéing
  • 1 medium onion Chopped
  • 2 cloves garlic Minced
  • 8 ounces mushrooms Sliced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • salt and pepper To taste
  • 1/4 cup chopped fresh parsley For garnish

Instructions
 

  • Prepare the wild rice by combining it with vegetable broth in a large pot. Bring to a boil, then simmer until tender.
  • Sauté the onion in olive oil until translucent, then add garlic and mushrooms, cooking until tender.
  • Combine the cooked wild rice with the sautéed mixture, heavy cream, cheddar cheese, and half of the Parmesan cheese. Season with salt and pepper.
  • Transfer to a greased baking dish, top with remaining Parmesan cheese, and bake until bubbly and golden.

Notes

This casserole can be made ahead of time and stored in the refrigerator for up to 24 hours before baking.
