  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional) for heat
  • 1 pound boneless, skinless chicken breasts, cooked and shredded
  • 2 cans white beans, drained and rinsed 15-ounce cans
  • 4 cups chicken broth
  • 1 cup frozen corn
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 1/4 cup fresh cilantro, chopped for garnish
  • Lime wedges for serving

Instructions
 

  • Cook the chicken by boiling, baking, or grilling. Shred the chicken using two forks.
  • Heat olive oil in a large pot over medium heat. Sauté diced onion for 5 minutes until soft, then add minced garlic and cook for 1 minute.
  • Add ground cumin, chili powder, smoked paprika, and cayenne pepper. Stir for 1 minute to toast the spices.
  • Add shredded chicken, white beans, chicken broth, and frozen corn. Stir well and bring to a gentle simmer.
  • Reduce heat to low and let simmer for 10-15 minutes, stirring occasionally.
  • Stir in heavy cream and season with salt and pepper. Cook for a few more minutes until heated through.
