Base Ingredients

  • 1 can (15 oz) white beans drained and rinsed
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 2 medium carrots diced
  • 2 stalks celery diced
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 leaf bay leaf
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup spinach optional
  • 1 lemon juice of 1 lemon

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add diced onion, carrots, and celery. Sauté for 5-7 minutes until softened.
  • Add minced garlic and cook for an additional minute.
  • Stir in the white beans and vegetable broth. Add thyme, rosemary, bay leaf, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
  • Remove the bay leaf and blend the soup until smooth using an immersion blender.
  • Stir in spinach and cook for 2-3 minutes until wilted. Squeeze in lemon juice and adjust seasoning if needed.
