Base Ingredients
- 1 can (15 oz) white beans drained and rinsed
- 1 medium onion diced
- 2 cloves garlic minced
- 2 medium carrots diced
- 2 stalks celery diced
- 4 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 leaf bay leaf
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 cup spinach optional
- 1 lemon juice of 1 lemon
Heat olive oil in a large pot over medium heat. Add diced onion, carrots, and celery. Sauté for 5-7 minutes until softened.
Add minced garlic and cook for an additional minute.
Stir in the white beans and vegetable broth. Add thyme, rosemary, bay leaf, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
Remove the bay leaf and blend the soup until smooth using an immersion blender.
Stir in spinach and cook for 2-3 minutes until wilted. Squeeze in lemon juice and adjust seasoning if needed.
