Ingredients

Crust

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar (for the crust)

Filling

  • 4 packages (8 ounces each) cream cheese, softened
  • 1 cup granulated sugar (for the filling)
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 1 tablespoon all-purpose flour

Instructions

  • Preheat the oven to 325°F. Prepare the crust by mixing graham cracker crumbs, melted butter, and sugar. Press into the bottom of a greased 9-inch springform pan and bake for 10 minutes. Let cool.
  • In a large mixing bowl, beat softened cream cheese until smooth. Gradually add sugar, then mix in vanilla extract. Add eggs one at a time, mixing on low speed. Fold in sour cream and flour until combined.
  • Pour the cheesecake filling over the cooled crust. Smooth the top and bake for 55-60 minutes until edges are set and center is slightly jiggly. Turn off the oven and crack the door open to cool gradually.
  • Allow the cheesecake to cool in the oven for 60 minutes. Transfer to the refrigerator and chill for at least 240 minutes or overnight before serving.
