Chicken

  • 2 large chicken breasts about 1 pound total
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)

Instructions
 

  • Season the chicken breasts with salt and black pepper. Heat olive oil in a large skillet over medium-high heat. Cook the chicken for 6-7 minutes on each side until golden brown and fully cooked. Remove from skillet and set aside.
  • In the same skillet, sauté minced garlic for 30 seconds until fragrant. Add halved cherry tomatoes and cook for 2-3 minutes until softened. Stir in fresh spinach and cook until wilted, about 1-2 minutes.
  • Pour in heavy cream and bring to a gentle simmer. Stir in grated Parmesan cheese, Italian seasoning, and red pepper flakes. Cook for another 2-3 minutes until the sauce thickens slightly.
  • Return the cooked chicken to the skillet and coat with the creamy sauce. Simmer for an additional 2 minutes to absorb flavors.
  • Garnish with fresh basil if desired and serve hot.
