- 8 ounces pasta (penne or fettuccine)
- 2 tablespoons olive oil
- 4 cloves garlic (minced)
- 14.5 ounces diced tomatoes (canned, undrained)
- 1 cup heavy cream
- 1 teaspoon Italian seasoning
- to taste salt and pepper
- 0.5 cup grated Parmesan cheese
- to taste fresh basil leaves (for garnish)
Gather all ingredients and have them ready.
Cook the pasta in a large pot of salted boiling water until al dente, about 8-10 minutes. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
Add the diced tomatoes (with juices) to the skillet and cook for about 5 minutes.
Reduce heat to low, stir in heavy cream and Italian seasoning, and season with salt and pepper. Simmer for 3-4 minutes until slightly thickened.
Add the drained pasta to the sauce and toss to coat. Stir in grated Parmesan cheese until melted.
Serve immediately, garnished with fresh basil leaves.
