Base Ingredients
- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 28 ounces crushed tomatoes 1 can
- 2 cups vegetable broth
- 1 teaspoon sugar
- 1 teaspoon dried basil
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 0.5 cup heavy cream
- Fresh basil leaves for garnish
Gather all ingredients and prepare them by dicing the onion and mincing the garlic.
In a large pot, heat olive oil over medium heat. Sauté the onion for 5 minutes until translucent, then add garlic and cook for 1 minute.
Add crushed tomatoes, vegetable broth, sugar, dried basil, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
Use an immersion blender to puree the soup until smooth. If using a regular blender, blend in batches and return to pot.
Return pot to low heat and stir in heavy cream. Heat through for 5 minutes without boiling.
Taste and adjust seasoning if needed. Serve hot, garnished with fresh basil leaves.
