Creamy Spinach and Tomato Tortellini
- 8 ounces cheese tortellini fresh or frozen
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 5 ounces fresh spinach
- 1 cup heavy cream
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1/2 cup grated Parmesan cheese
- Fresh basil for garnish (optional)
Bring a large pot of salted water to a boil. Add the cheese tortellini and cook according to package instructions, usually 3-5 minutes for fresh or 7-10 minutes for frozen. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add halved cherry tomatoes and cook for 3-4 minutes until softened. Stir in fresh spinach and cook until wilted, about 2 minutes.
Pour in heavy cream and add Italian seasoning. Stir and let simmer for 2-3 minutes. Season with salt and pepper to taste.
Add the cooked tortellini to the skillet and toss gently to coat in the creamy sauce. Sprinkle in grated Parmesan cheese and stir until melted.
Serve immediately, garnished with fresh basil if desired.
