Ingredients
  

Creamy Spinach and Tomato Tortellini

  • 8 ounces cheese tortellini fresh or frozen
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 5 ounces fresh spinach
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • Fresh basil for garnish (optional)

Instructions
 

  • Bring a large pot of salted water to a boil. Add the cheese tortellini and cook according to package instructions, usually 3-5 minutes for fresh or 7-10 minutes for frozen. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add halved cherry tomatoes and cook for 3-4 minutes until softened. Stir in fresh spinach and cook until wilted, about 2 minutes.
  • Pour in heavy cream and add Italian seasoning. Stir and let simmer for 2-3 minutes. Season with salt and pepper to taste.
  • Add the cooked tortellini to the skillet and toss gently to coat in the creamy sauce. Sprinkle in grated Parmesan cheese and stir until melted.
  • Serve immediately, garnished with fresh basil if desired.
