Salmon Fillets
- 12 ounces salmon fillets 2 (6-ounce) fillets
- 1 tablespoon olive oil
- 1 teaspoon garlic, minced
- 1 cup fresh spinach, chopped
- 0.5 cup heavy cream
- 0.25 cup grated Parmesan cheese
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 0.25 teaspoon red pepper flakes (optional)
- 1 tablespoon lemon juice
Rinse the fresh spinach under cold water, chop it, mince the garlic, and season the salmon fillets with salt and black pepper.
Heat olive oil in a skillet over medium heat. Cook salmon fillets skin-side down for 4-5 minutes until crispy, then flip and cook for another 3-4 minutes until cooked through.
In the same skillet, sauté minced garlic for 30 seconds, add chopped spinach and cook for 2 minutes until wilted. Pour in heavy cream and bring to a simmer, then add Parmesan, salt, black pepper, and optional red pepper flakes. Cook for another 2-3 minutes until thickened.
Return the salmon to the skillet, spoon sauce over it, drizzle with lemon juice, and cook for an additional minute to warm through.
