  • 1 pound Italian sausage Choose between mild or spicy.
  • 1 medium onion Diced.
  • 3 cloves garlic Minced.
  • 4 cups chicken broth Forms the base of the soup.
  • 1 14.5-ounce can diced tomatoes Undrained.
  • 1 9-ounce package refrigerated cheese tortellini The star of the dish.
  • 1 cup heavy cream For creamy texture.
  • 2 cups fresh spinach Adds nutrition.
  • 1 teaspoon Italian seasoning Enhances flavor.
  • Salt and pepper To taste.
  • Grated Parmesan cheese For serving.
  • Fresh parsley Chopped, optional for garnish.

Instructions
 

  • Sauté the Italian sausage in a large pot over medium heat until browned, about 5-7 minutes. Drain excess fat.
  • Add diced onion and minced garlic to the pot, sauté for 3-4 minutes until onion is translucent.
  • Pour in chicken broth and diced tomatoes, stir and bring to a simmer. Add cheese tortellini and cook for 3-5 minutes until tender.
  • Reduce heat to low, stir in heavy cream, fresh spinach, Italian seasoning, salt, and pepper. Cook for an additional 2-3 minutes until spinach wilts.
  • Serve the soup in bowls, garnished with grated Parmesan cheese and chopped parsley if desired.
