- 8 ounces whole wheat pasta (fusilli or rotini)
- 1 cup cooked chicken breast, diced
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/2 cup plain Greek yogurt
- 1/4 cup ranch dressing
- 1 tablespoon lemon juice
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Bring a large pot of salted water to a boil. Add the whole wheat pasta and cook according to the package instructions until al dente. Drain and rinse under cold water.
In a medium-sized bowl, combine Greek yogurt, ranch dressing, lemon juice, garlic powder, onion powder, salt, and pepper. Whisk until smooth.
In a large mixing bowl, combine the cooled pasta, diced chicken, cherry tomatoes, cucumber, red bell pepper, and red onion. Pour the dressing over and toss to coat.
Cover the salad and refrigerate for at least 30 minutes before serving. Garnish with fresh parsley.
