Pasta

  • 8 ounces whole wheat pasta (fusilli or rotini)
  • 1 cup cooked chicken breast, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup plain Greek yogurt
  • 1/4 cup ranch dressing
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions
 

  • Bring a large pot of salted water to a boil. Add the whole wheat pasta and cook according to the package instructions until al dente. Drain and rinse under cold water.
  • In a medium-sized bowl, combine Greek yogurt, ranch dressing, lemon juice, garlic powder, onion powder, salt, and pepper. Whisk until smooth.
  • In a large mixing bowl, combine the cooled pasta, diced chicken, cherry tomatoes, cucumber, red bell pepper, and red onion. Pour the dressing over and toss to coat.
  • Cover the salad and refrigerate for at least 30 minutes before serving. Garnish with fresh parsley.
