  • 1 tablespoon olive oil
  • 1 pound Italian sausage (mild or spicy, casings removed)
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 3 medium carrots diced
  • 2 stalks celery diced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoon red pepper flakes (optional)
  • 4 cups chicken broth
  • 14.5 ounces diced tomatoes canned, undrained
  • 1 cup ditalini pasta
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley chopped, for garnish

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add Italian sausage and sauté for 5-7 minutes until golden brown.
  • Add diced onion, minced garlic, diced carrots, and diced celery. Sauté for 5-6 minutes until vegetables soften. Add dried oregano, dried basil, and red pepper flakes, cooking for another minute.
  • Add chicken broth and diced tomatoes (undrained). Bring to a boil, then add ditalini pasta. Cook for 8-10 minutes until pasta is al dente.
  • Reduce heat to low, stir in heavy cream and grated Parmesan cheese until melted. Season with salt and pepper to taste.
  • Let the soup simmer for a few minutes, then ladle into bowls and garnish with fresh parsley. Serve hot.
