  • 1 pound boneless, skinless chicken breasts, diced provides protein and heartiness

  • 1/4 cup all-purpose flour to thicken sauce
  • 4 cups chicken broth for sauce base
  • 1 cup heavy cream for creaminess
  • 1 pound potato gnocchi for texture
  • 1 cup frozen peas for color and sweetness
  • 1/4 cup fresh parsley, chopped for garnish

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add diced chicken, salt, and black pepper. Cook for 5-7 minutes until browned and cooked through. Remove chicken and set aside.
  • In the same pot, add diced onion, minced garlic, carrots, and celery. Sauté for 5 minutes until softened and fragrant.
  • Stir in potato gnocchi and cook for 1-2 minutes to absorb flavors.
  • Sprinkle dried thyme and rosemary over vegetables. Add flour, stirring constantly for 2 minutes. Gradually pour in chicken broth while stirring. Bring to a simmer and cook for 5 minutes until thickened. Stir in heavy cream.
  • Add cooked chicken back into the pot along with gnocchi. Stir well to combine.
  • Stir in frozen peas and cook for another 2 minutes. Adjust seasoning if needed. Garnish with fresh parsley before serving.
