Heat olive oil in a large pot over medium heat. Add diced chicken, salt, and black pepper. Cook for 5-7 minutes until browned and cooked through. Remove chicken and set aside.
In the same pot, add diced onion, minced garlic, carrots, and celery. Sauté for 5 minutes until softened and fragrant.
Stir in potato gnocchi and cook for 1-2 minutes to absorb flavors.
Sprinkle dried thyme and rosemary over vegetables. Add flour, stirring constantly for 2 minutes. Gradually pour in chicken broth while stirring. Bring to a simmer and cook for 5 minutes until thickened. Stir in heavy cream.
Add cooked chicken back into the pot along with gnocchi. Stir well to combine.
Stir in frozen peas and cook for another 2 minutes. Adjust seasoning if needed. Garnish with fresh parsley before serving.
