Chicken

  • 2 cups cooked chicken shredded or diced
  • 1 cup mushrooms sliced
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil for sautéing mushrooms
  • 1/4 cup fresh parsley chopped, for garnish

Instructions
 

  • Prepare the chicken by shredding or dicing it into bite-sized pieces.
  • Heat olive oil in a large skillet over medium heat and sauté sliced mushrooms for about 5 minutes until softened and lightly browned.
  • In a mixing bowl, combine heavy cream, chicken broth, garlic powder, onion powder, dried thyme, salt, and black pepper. Whisk until well blended.
  • In a large casserole dish, combine cooked chicken and sautéed mushrooms. Pour the creamy sauce over and stir gently to coat.
  • Sprinkle shredded mozzarella and grated Parmesan cheese over the top. Bake in a preheated oven for 25-30 minutes until cheese is bubbly and golden brown.
  • Let cool for a few minutes, garnish with fresh parsley, and serve.
