  • 1 medium onion Diced.
  • 3 cloves garlic Minced.
  • 1 medium carrot Diced.
  • 1 medium celery stalk Diced.
  • 1 can (14.5 ounces) diced tomatoes Undrained.
  • 4 cups chicken broth Base of the soup.
  • 1 cup heavy cream For creaminess.
  • 1 teaspoon dried basil Classic herb.
  • 1 teaspoon dried oregano Adds Italian flair.
  • Salt and pepper To taste.
  • 2 cups fresh spinach For nutrition.
  • 1 cup shredded Parmesan cheese For creaminess.
  • 1 tablespoon olive oil For sautéing.

Instructions
 

  • Prepare all ingredients by dicing vegetables, mincing garlic, and crumbling the sausage.
  • In a large pot, heat olive oil over medium heat. Add crumbled Italian sausage and cook for 5 to 7 minutes until browned.
  • Add diced onion, carrot, and celery to the pot. Sauté for 5 minutes, then add minced garlic and cook for 1 minute.
  • Stir in undrained diced tomatoes and chicken broth. Add dried basil, oregano, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15 minutes.
  • Pour in heavy cream and stir well. Add fresh spinach and cook for 2 to 3 minutes until wilted.
  • Remove from heat and stir in shredded Parmesan cheese until melted. Serve warm.
