Pasta
- 8 ounces fettuccine or spaghetti
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 0.25 teaspoon red pepper flakes (optional)
- 0.25 cup chopped fresh parsley (for garnish)
Bring a large pot of salted water to a boil. Add the fettuccine or spaghetti and cook until al dente, about 8-10. Drain and reserve 1/2 cup of pasta cooking water.
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 until fragrant.
Pour in heavy cream and bring to a gentle simmer, stirring occasionally.
Add the cooked pasta to the skillet and toss until well coated. If the sauce is too thick, add reserved pasta cooking water gradually.
Stir in grated Parmesan cheese, salt, black pepper, and red pepper flakes. Mix until the cheese melts and the sauce is smooth.
Remove from heat and serve garnished with chopped parsley.
