Instructions
 

  • Cut the chicken into bite-sized pieces and season with salt and black pepper. Heat olive oil in a large skillet over medium-high heat and cook the chicken for 6-8 minutes until browned and cooked through. Remove from skillet and set aside.
  • Bring a large pot of salted water to a boil. Add fettuccine and cook according to package instructions until al dente, about 8-10 minutes. Drain and reserve 1/2 cup of pasta water.
  • In the same skillet, sauté minced garlic for 1 minute until fragrant. Pour in heavy cream and bring to a gentle simmer. Gradually whisk in grated Parmesan cheese until melted and smooth. Stir in Italian seasoning.
  • Add cooked chicken and fettuccine to the skillet with the sauce. Toss gently to coat. If the sauce is too thick, add reserved pasta water to reach desired consistency.
  • Taste and adjust seasoning if needed. Serve immediately, garnished with chopped parsley.
