Instructions
 

  • Gather all your ingredients.
  • Prepare the vegetables by dicing the onion and mincing the garlic.
  • In a large pot, heat over medium heat. Add the ground beef and cook until browned, about 5 to 7 minutes. Drain excess fat. Add the diced onion and minced garlic, sauté until onion is translucent, about 5 minutes.
  • Stir in the black beans, corn, diced tomatoes, cream of mushroom soup, and beef broth. Mix well. Sprinkle in chili powder, cumin, paprika, salt, and pepper. Bring to a simmer and cook for about 15 minutes, stirring occasionally.
  • Reduce heat to low. Stir in the heavy cream and heat for an additional 5 minutes. Remove from heat and mix in the shredded cheddar cheese until melted. Serve and garnish with fresh cilantro if desired.
