- 2 cups cooked wild rice
- 2 cups cooked, shredded chicken
- 1 cup cream of mushroom soup
- 1 cup chicken broth
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 1 cup shredded cheddar cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1 tablespoon olive oil
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 1/2 cup chopped bell pepper
- 1/2 teaspoon dried thyme
Prep all ingredients by chopping the onion, celery, and bell pepper. Cook the wild rice if not already done.
In a large skillet, heat olive oil over medium heat. Sauté the chopped onion, celery, and bell pepper for 5 minutes until tender.
In a large mixing bowl, combine cooked wild rice, shredded chicken, cream of mushroom soup, chicken broth, frozen mixed vegetables, and sautéed vegetables. Add garlic powder, onion powder, black pepper, salt, and dried thyme. Stir until well combined.
Pour the mixture into a greased 9x13-inch baking dish. Sprinkle shredded cheddar cheese on top. Cover with aluminum foil and bake at 350°F for 25 minutes. Remove foil and bake for an additional 15 minutes until cheese is bubbly and golden brown.
