Chicken
- 2 pounds boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 cup plain yogurt
- 2 tablespoons lemon juice
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon ground turmeric
- 1 teaspoon garam masala
- 1 teaspoon paprika
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 3 tablespoons vegetable oil
- 1 medium onion, finely chopped
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1 can (14 ounces) crushed tomatoes
- 1 cup heavy cream
- Fresh cilantro, for garnish
Marinate the chicken by combining yogurt, lemon juice, cumin, coriander, turmeric, garam masala, salt, and black pepper in a bowl. Add chicken pieces and coat well. Cover and refrigerate for at least 60 minutes or overnight.
Heat vegetable oil in a large skillet over medium heat. Sauté chopped onion for about 5 minutes until soft. Add minced garlic and ginger, cooking for an additional 1-2 minutes.
Add marinated chicken to the skillet and cook for 5-7 minutes, stirring occasionally until browned on all sides.
Pour in crushed tomatoes and stir to combine. Bring to a gentle simmer, reduce heat to low, cover, and cook for 15-20 minutes.
Stir in heavy cream and let it simmer for another 5 minutes. Adjust seasoning if needed and garnish with fresh cilantro before serving.
