- 2 cups cooked chicken, shredded
- 1 cup fresh spinach, chopped
- 8 ounces cream cheese, softened
- 1 cup sour cream
- 1 cup shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon crushed red pepper flakes (optional)
- 1 cup cooked rice (white or brown)
- 1/2 cup breadcrumbs (optional, for topping)
Preheat your oven to 350°F (175°C).
Shred your cooked chicken and set aside.
Sauté the chopped spinach over medium heat for about 2-3 minutes until wilted.
In a large mixing bowl, combine the softened cream cheese, sour cream, garlic powder, onion powder, salt, black pepper, and crushed red pepper flakes. Blend until smooth.
Stir in the shredded chicken, sautéed spinach, cooked rice, mozzarella cheese, and half of the Parmesan cheese into the creamy sauce. Mix until well coated.
Transfer the mixture into a greased 9x13 inch baking dish. Sprinkle breadcrumbs and remaining Parmesan cheese on top. Bake for 25-30 minutes until bubbly and golden brown.
Let it cool for about 5 minutes before serving.
