  • 2 cups cooked chicken, shredded
  • 1 cup fresh spinach, chopped
  • 8 ounces cream cheese, softened
  • 1 cup sour cream
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1 cup cooked rice (white or brown)
  • 1/2 cup breadcrumbs (optional, for topping)

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Shred your cooked chicken and set aside.
  • Sauté the chopped spinach over medium heat for about 2-3 minutes until wilted.
  • In a large mixing bowl, combine the softened cream cheese, sour cream, garlic powder, onion powder, salt, black pepper, and crushed red pepper flakes. Blend until smooth.
  • Stir in the shredded chicken, sautéed spinach, cooked rice, mozzarella cheese, and half of the Parmesan cheese into the creamy sauce. Mix until well coated.
  • Transfer the mixture into a greased 9x13 inch baking dish. Sprinkle breadcrumbs and remaining Parmesan cheese on top. Bake for 25-30 minutes until bubbly and golden brown.
  • Let it cool for about 5 minutes before serving.
