Instructions
 

  • Shred your cooked chicken and set aside.
  • In a large pot, heat olive oil over medium heat. Sauté diced onion for 5 minutes until translucent, then add minced garlic and cook for 1 minute.
  • Stir in orzo pasta and toast for 2-3 minutes. Pour in chicken broth, bring to a boil, then reduce heat and simmer for 8-10 minutes until orzo is tender.
  • Stir in heavy cream, shredded chicken, frozen mixed vegetables, thyme, rosemary, salt, and pepper. Cook for another 5 minutes.
  • Remove from heat and stir in shredded cheddar cheese until melted.
  • Pour the mixture into a baking dish or ramekins. Preheat oven to 375°F. Bake for 20-25 minutes until golden and bubbly.
  • Let cool for a few minutes before serving. Garnish with fresh parsley.
