- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3 cloves garlic, minced
- 5 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1/4 teaspoon red pepper flakes (optional)
- 8 ounces fettuccine pasta
- Fresh parsley, chopped (for garnish)
Heat olive oil in a large skillet over medium heat. Add chicken, season with salt and pepper, and cook for 5-7 minutes until browned and cooked through. Remove and set aside.
In the same skillet, sauté minced garlic for 1 minute, then add spinach and cook for 2-3 minutes until wilted.
Pour in heavy cream, bring to a simmer, stir in Parmesan cheese, Italian seasoning, and red pepper flakes. Cook for 2-3 minutes until thickened.
Cook fettuccine according to package instructions. Drain and set aside. Return chicken to skillet, mix well, then add fettuccine and toss to coat.
Let everything cook together for an additional minute or two, then serve garnished with parsley.
