Olive Oil

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 cloves garlic, minced
  • 5 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • 8 ounces fettuccine pasta
  • Fresh parsley, chopped (for garnish)

Instructions
 

  • Heat olive oil in a large skillet over medium heat. Add chicken, season with salt and pepper, and cook for 5-7 minutes until browned and cooked through. Remove and set aside.
  • In the same skillet, sauté minced garlic for 1 minute, then add spinach and cook for 2-3 minutes until wilted.
  • Pour in heavy cream, bring to a simmer, stir in Parmesan cheese, Italian seasoning, and red pepper flakes. Cook for 2-3 minutes until thickened.
  • Cook fettuccine according to package instructions. Drain and set aside. Return chicken to skillet, mix well, then add fettuccine and toss to coat.
  • Let everything cook together for an additional minute or two, then serve garnished with parsley.
