Base Ingredients

  • 2 tablespoons olive oil For sautéing onions and garlic.
  • 1 medium onion, chopped Provides a sweet and savory base.
  • 2 cloves garlic, minced Adds flavor.
  • 1 head cauliflower, chopped into florets About 4 cups.
  • 4 cups vegetable broth Adds moisture and flavor.
  • 1 cup heavy cream For creaminess.
  • 1 teaspoon salt Enhances flavor.
  • 1/2 teaspoon black pepper Adds mild heat.
  • 1/2 teaspoon nutmeg Brings warmth and sweetness.
  • 1/4 cup fresh parsley, chopped For garnish.

Instructions
 

  • Rinse the cauliflower under cold water and chop into florets. Set aside.
  • In a large pot, heat olive oil over medium heat. Sauté chopped onion for 5 minutes until translucent, then add minced garlic and cook for 1 minute.
  • Add chopped cauliflower and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 15-20 minutes until cauliflower is tender.
  • Blend the soup until smooth using an immersion blender or countertop blender.
  • Return the soup to the pot, stir in heavy cream, salt, black pepper, and nutmeg. Heat on low for 5 minutes without boiling.
  • Ladle the soup into bowls and garnish with fresh parsley. Serve hot.

Notes

For a chunkier soup, reserve some cauliflower florets before blending and stir them back in after blending.
