Instructions
 

  • Heat olive oil in a large skillet over medium-high heat. Add chicken, Cajun seasoning, salt, and black pepper. Cook for 5-7 minutes until browned and cooked through. Remove chicken and set aside.
  • In the same skillet, sauté onion for 3-4 minutes until soft. Add garlic and cook for 1 minute. Stir in rice and toast for 1-2 minutes. Pour in chicken broth and bring to a boil. Reduce heat, cover, and simmer for 15 minutes.
  • Stir in heavy cream, cooked chicken, and frozen peas. Cook for 5 minutes, stirring occasionally.
  • Remove from heat and stir in Parmesan cheese. Mix well and garnish with sliced green onions before serving.
