  • 1 pound boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 teaspoon Cajun seasoning for flavor
  • 1/2 teaspoon salt to enhance flavor
  • 1/4 teaspoon black pepper for subtle heat
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 bell pepper diced red or green
  • 1 can (14.5 ounces) diced tomatoes undrained
  • 1 cup chicken broth for moisture
  • 8 ounces penne pasta to hold the sauce
  • 1 cup heavy cream for creaminess
  • 1 cup shredded Parmesan cheese for cheesy finish
  • 2 tablespoons chopped fresh parsley for garnish

Instructions
 

  • Heat olive oil in a large skillet over medium heat. Add chicken pieces, Cajun seasoning, salt, and black pepper. Cook for 5-7 minutes until browned and cooked through. Remove chicken and set aside.
  • In the same skillet, sauté diced onion and bell pepper for 3-4 minutes until softened. Add minced garlic and cook for 1 minute. Stir in diced tomatoes and chicken broth, bringing to a simmer.
  • Add penne pasta to the skillet, stir, cover, and cook for 12-15 minutes until pasta is al dente, stirring occasionally.
  • Reduce heat to low, add heavy cream and cooked chicken. Heat through for 2-3 minutes.
  • Stir in shredded Parmesan cheese until melted and well combined. Serve immediately, garnished with chopped parsley.
