Chicken
- 2 pounds boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon garam masala
- 1 tablespoon ground cumin
- 1 tablespoon ground coriander
- 1 teaspoon turmeric
- 1 tablespoon vegetable oil
- 1 medium onion, finely chopped
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1 can (15 ounces) tomato sauce
- 1 cup heavy cream
- 1 tablespoon lemon juice
- Fresh cilantro, for garnish
- Cooked basmati rice, for serving
Prepare all ingredients by cutting chicken, chopping onion, and mincing garlic and ginger.
Set Instant Pot to sauté, add vegetable oil, and sauté chopped onion for 3-4 minutes until soft. Then add minced garlic and ginger, sauté for an additional 1-2 minutes.
Add seasoned chicken to the pot, stir to combine with onion mixture, then pour in tomato sauce and mix well.
Close the lid, set valve to sealing, and pressure cook on high for 10 minutes. Allow natural pressure release for 5 minutes, then perform quick release.
Stir in heavy cream and lemon juice, heat through for 2-3 minutes on sauté function, and adjust seasoning if needed.
Serve over cooked basmati rice and garnish with fresh cilantro.
