Quinoa

  • 1 cup quinoa Rinsed to remove any bitterness.
  • 2 cups water or chicken broth For cooking the quinoa, adding flavor.
  • 1 pound boneless, skinless chicken breasts The main protein source.
  • 1 tablespoon olive oil For cooking the chicken and adding healthy fats.
  • 1 teaspoon garlic powder For a savory flavor boost.
  • 1 teaspoon paprika Adds a mild smokiness.
  • to taste salt and pepper To taste, enhancing all the flavors.
  • 1 ripe avocado Diced for creaminess and healthy fats.
  • 1 cup cherry tomatoes Halved for a burst of sweetness.
  • 1 cup corn Fresh, frozen, or canned, for added sweetness and crunch.
  • 1 lime Juiced for a zesty kick.
  • ¼ cup fresh cilantro Chopped for freshness and flavor.
  • ½ cup Greek yogurt For creaminess and protein.
  • 1 teaspoon lime zest To enhance the lime flavor.

Instructions
 

  • Rinse the quinoa under cold water. In a medium saucepan, combine the rinsed quinoa and 2 cups of water or chicken broth. Bring to a boil, then reduce heat to low, cover, and let simmer for 15 minutes. Remove from heat and let sit covered for 5 minutes.
  • Season the chicken breasts with olive oil, garlic powder, paprika, salt, and pepper. Heat a skillet over medium-high heat and cook the chicken for 6-7 minutes on each side until fully cooked. Let rest before slicing.
  • In a small bowl, combine diced avocado, Greek yogurt, lime juice, and lime zest. Mash until smooth. Adjust consistency with water or extra lime juice if needed.
  • In a large bowl, combine cooked quinoa, diced avocado, halved cherry tomatoes, and corn. Drizzle with lime juice and sprinkle with cilantro. Toss gently. Serve topped with sliced chicken and creamy avocado dressing.
