Ingredients
  

Cranberry Sauce

  • 1 cup fresh or frozen cranberries
  • 1/2 cup granulated sugar
  • 1/2 cup water
  • 1 teaspoon vanilla extract
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup crushed graham crackers for garnish
  • Fresh mint leaves for garnish, optional

Instructions
 

  • Prepare the cranberry sauce by combining cranberries, sugar, and water in a saucepan. Boil, then simmer for 10 minutes until thickened. Stir in vanilla and cool.
  • Make the mascarpone mousse by mixing mascarpone, heavy cream, powdered sugar, cinnamon, and salt in a bowl. Beat until soft peaks form, about 3-5 minutes.
  • Fold the cooled cranberry sauce into the mascarpone mixture. Spoon or pipe into serving cups and chill for at least 120 minutes before serving.
