Cranberry Sauce
- 1 cup fresh or frozen cranberries
- 1/2 cup granulated sugar
- 1/2 cup water
- 1 teaspoon vanilla extract
- 1 cup mascarpone cheese
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup crushed graham crackers for garnish
- Fresh mint leaves for garnish, optional
Prepare the cranberry sauce by combining cranberries, sugar, and water in a saucepan. Boil, then simmer for 10 minutes until thickened. Stir in vanilla and cool.
Make the mascarpone mousse by mixing mascarpone, heavy cream, powdered sugar, cinnamon, and salt in a bowl. Beat until soft peaks form, about 3-5 minutes.
