Base Ingredients
- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 medium carrots, diced
- 2 stalks celery, diced
- 3 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 6 cups vegetable broth
- 1 cup wild rice, rinsed
- 1 cup kale, chopped
- 1 cup heavy cream
- 1 tablespoon lemon juice
Heat olive oil in a large pot over medium heat. Add diced onion, carrots, and celery. Sauté for about 5 minutes until softened.
Rinse wild rice under cold water. Add rinsed wild rice to the pot with vegetable broth. Bring to a boil, then reduce heat to low and cover. Let it simmer for 45-50 minutes.
After 20 minutes of simmering, stir in minced garlic and sliced mushrooms along with thyme, rosemary, salt, and black pepper.
Continue to simmer until wild rice is tender. If needed, let it cook a few more minutes.
Once wild rice is cooked, stir in chopped kale and heavy cream. Cook for an additional 5 minutes until kale wilts.
Remove from heat and add lemon juice. Adjust seasoning if needed and serve.
