Base Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 6 cups vegetable broth
  • 1 cup wild rice, rinsed
  • 1 cup kale, chopped
  • 1 cup heavy cream
  • 1 tablespoon lemon juice

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add diced onion, carrots, and celery. Sauté for about 5 minutes until softened.
  • Rinse wild rice under cold water. Add rinsed wild rice to the pot with vegetable broth. Bring to a boil, then reduce heat to low and cover. Let it simmer for 45-50 minutes.
  • After 20 minutes of simmering, stir in minced garlic and sliced mushrooms along with thyme, rosemary, salt, and black pepper.
  • Continue to simmer until wild rice is tender. If needed, let it cook a few more minutes.
  • Once wild rice is cooked, stir in chopped kale and heavy cream. Cook for an additional 5 minutes until kale wilts.
  • Remove from heat and add lemon juice. Adjust seasoning if needed and serve.
