Instructions
 

  • Heat olive oil in a large pot over medium heat. Add diced onion, carrots, and celery. Sauté for 5-7 minutes until softened. Stir in minced garlic, dried thyme, and smoked paprika, cooking for an additional minute.
  • Add rinsed lentils and vegetable broth to the pot. Stir to combine, bring to a boil, then reduce heat to low and let simmer for 25-30 minutes until lentils are tender.
  • Once lentils are tender, stir in butter beans and chopped spinach. Cook for about 5 minutes until spinach wilts and beans are heated through. Adjust seasoning with salt and pepper.
  • Squeeze juice of one lemon into the pot, stir, and serve the soup in bowls. Garnish with fresh herbs if desired.
