  • 1 pound Italian sausage Choose between mild or spicy.
  • 1 medium onion Diced.
  • 3 cloves garlic Minced.
  • 4 medium potatoes Diced (about 1.5 pounds).
  • 4 cups chicken broth Forms the base of the soup.
  • 1 can (14.5 ounces) diced tomatoes Undrained.
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • to taste salt and pepper
  • 2 cups fresh spinach Chopped.
  • 1 cup heavy cream Adds richness.
  • to taste grated Parmesan cheese Optional, for serving.

Instructions
 

  • Wash and peel the potatoes, then dice them into small cubes. Dice the onion and mince the garlic.
  • In a large pot, heat over medium heat. Crumble the Italian sausage into the pot and cook for 5-7 minutes until browned.
  • Add the diced onion and minced garlic, sauté for 3-4 minutes until the onion is translucent.
  • Stir in the diced potatoes, chicken broth, and diced tomatoes. Add oregano, basil, salt, and pepper. Bring to a boil, then reduce heat to low.
  • Let the soup simmer for 15-20 minutes until the potatoes are tender.
  • Add the chopped spinach and heavy cream, stir, and cook for an additional 5 minutes.

Notes

Can be customized with different sausages or vegetables.
