Instructions
Wash and peel the potatoes, then dice them into small cubes. Dice the onion and mince the garlic.
In a large pot, heat over medium heat. Crumble the Italian sausage into the pot and cook for 5-7 minutes until browned.
Add the diced onion and minced garlic, sauté for 3-4 minutes until the onion is translucent.
Stir in the diced potatoes, chicken broth, and diced tomatoes. Add oregano, basil, salt, and pepper. Bring to a boil, then reduce heat to low.
Let the soup simmer for 15-20 minutes until the potatoes are tender.
Add the chopped spinach and heavy cream, stir, and cook for an additional 5 minutes.
