Base Ingredients
- 1 tablespoon olive oil for sautéing
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 pound Italian sausage, casings removed
- 1 head cauliflower, chopped into florets
- 4 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon dried thyme
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup shredded carrots
- ¼ cup fresh parsley, chopped (for garnish)
Prepare the ingredients by washing and chopping the cauliflower, dicing the onion, and mincing the garlic.
In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5.
Add the minced garlic and Italian sausage. Cook until browned and fully cooked, about 7 to 10.
Add the cauliflower florets, chicken broth, heavy cream, thyme, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 15 to 20.
Blend the soup until creamy and smooth, then return to the pot.
Taste and adjust seasoning if needed. Add shredded carrots and cook for an additional 5 before serving.
Serve hot, garnished with fresh parsley.
