Instructions
 

  • Heat olive oil in a large pot over medium heat. Add diced onion and sauté for 5 minutes until soft. Stir in minced garlic and cook for 1 minute.
  • Add ground beef, breaking it apart as it cooks for 6-8 minutes until browned. Drain excess fat. Sprinkle in chili powder, cumin, smoked paprika, salt, and black pepper. Stir and cook for 1-2 minutes.
  • Pour in undrained diced tomatoes, rinsed black beans, drained corn, and beef broth. Stir and bring to a gentle simmer. Cook for 15 minutes, stirring occasionally.
  • Reduce heat to low and stir in heavy cream and shredded cheddar cheese until melted and combined.
  • Taste and adjust seasoning if needed. Serve garnished with fresh cilantro and a dollop of sour cream if desired.
