Cowboy Tater Tot Casserole Ingredients
- 2 cups frozen tater tots
- 1 pound ground beef
- 1 small onion, diced
- 1 cup bell pepper, diced
- 2 cloves garlic, minced
- 1 can black beans, drained and rinsed (15 ounces)
- 1 can corn, drained (15 ounces)
- 1 can cream of mushroom soup (10.5 ounces)
- 1 cup shredded cheddar cheese
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 2 tablespoons olive oil
Gather all your ingredients and prep them by dicing the onion and bell pepper, and mincing the garlic.
In a large skillet, heat olive oil over medium heat. Sauté the onion and bell pepper for about 5 minutes until soft, then add garlic and cook for 1 more minute.
Add ground beef to the skillet, breaking it apart as it cooks. Stir until browned, about 7-10 minutes, and drain excess fat.
Stir in black beans, corn, cream of mushroom soup, chili powder, cumin, salt, and pepper. Mix well and heat through.
Transfer the mixture to a greased 9x13-inch baking dish. Arrange tater tots in a single layer on top and sprinkle with cheddar cheese.
Preheat oven to 375°F. Bake for 30-35 minutes until tater tots are golden brown and cheese is melted.
Let cool for a few minutes before serving.
