Preheat your oven to 350°F (175°C).
In a large skillet, heat a splash of oil over medium heat. Add the ground beef and diced onion. Cook for about 5-7 minutes until browned and the onion is soft. Drain excess fat.
Mix in the black beans, corn, and diced tomatoes with green chilies. Sprinkle in the garlic powder, chili powder, cumin, salt, and pepper. Stir until well combined.
In a large mixing bowl, combine the beef and vegetable mixture, ensuring even distribution.
In a greased baking dish, spread half of the frozen tater tots. Layer the beef mixture on top, then sprinkle one cup of shredded cheddar cheese.
Top with the remaining tater tots and cheese. Bake for 30-35 minutes until golden brown and crispy.
